Techniques for incorporation of hydrocolloids and stabilizers in liquid systems:

  • Intersperse hydrocolloid/stabilizer under strong turbulence directly into liquid phase.
  • Premix hydrocolloid/stabilizer with about four times more dry ingredients and under strong turbulence add directly to liquid phase.
  • Stir hydrocolloid/stabilizer with about four times more liquid sugar and under strong turbulence add to liquid phase.
  • Disperse hydrocolloid/stabilizer with about four times more oil or liquid and under strong turbulence add to liquid phase.
  • Wet hydrocolloid/stabilizer with ethanol and under strong turbulence add to liquid phase.
  • Mix hydrocolloid/stabilizer by means of dispersion system (Rotor-Stator principle) in dry form directly into liquid phase.

Viscosity measurement according to PROVISCO standard method
Definition of viscosity is made by BROOKFIELD RVT rotation viscosimeter (measuring of Newton and non-Newton liquids possible).
